Fresh Ideas at Fine Food Melbourne

From catering equipment and refrigeration through to bakery and retail equipment, it’s a great place for business owners and operators to discover new ideas. Some of the industry specific seminars on sustainability, concept development and social media together with a dedicated new product showcase area exhibiting convenience products through to new allergen free ranges, tested the traditional boundaries and produced innovative solutions.

SKOPE is on track with the latest trends and in touch with the market as we presented an expanding range of refrigeration solutions. From our new energy efficient range of VF freezers through to the MISA range of modular cool rooms and the latest Blast Chilling technology from IRINOX.

IRINOX’s MF Plus range was one of the stars of the show at the SKOPE stand and the live demonstrations proved it was the Swiss Army Knife of machines.

The IRINOX training demonstrations run by Richard Bennett (SKOPE), Gabriele Vendruscolo (IRINOX Italy) and Chef Christine Estur (IRINOX Phillipines) were a hit, particularly the food samples! Also on display were the newest additions to SKOPE’s IRINOX range, the NICE Holding Cabinet and the EF15.1.

Sharing the stand was the always-popular Centaur foodservice range including two of the range’s newest products, the 6 drawer and one-door under-counter chillers, and the MISA modular coolroom, now HACCP approved.

In addition to showcasing the latest refrigeration, Robert Stewart, owner of SKOPE, and Alexandra Stewart, SKOPE’s Creative Director, were also on the stand, busy catching up with both old and new customers and viewing the latest developments in the industry.

The preview of our new Project Portfolio, gained plenty of attention from dealers and specifiers, creating conversations about the new technologies and finishes used in high profile projects across Australia and New Zealand. Watch out for its release later this month.

The New Kitchen Assistant has Arrived


The EF15.1, a new blast-chilling and shock-freezing system from IRINOX, features a 15 kilo capacity and the ability to fit five gastronorm or five baking trays comfortably. Saving precious space, it fits underbench and runs on single phase.

With both delicate and strong chilling and freezing cycles that are unique to Irinox, it’s a well-priced efficient cabinet with empowered cooling systems, bigger evaporators, new generation fans and enhanced shock freezing. 

The special airflow guarantees higher efficiency, perfect temperature uniformity in every part of the cabinet and moisture preservation. The optional Sanigen bacterial cleaning cycle is an extra layer of protection to assist in achieving perfect hygiene.

MISA Receives HACCP CertificationHACCP Australia has endorsed the MISA Coolrooms for use in all food processing, preparation and food handling facilities that operate in accordance with a HACCP-based Food Safety Programme.

Advancing Professional Standards

SKOPE recently presented two education seminars to the IHHC (Institute of Hospitality in Healthcare) and the AIFST (the Australian Institute of Food Science and Technology) Cook Chill Group, on the importance of blast chilling to food preparation in the Health and Aged Care industries.

In food preparation, time and temperature relationships are critical to the growth and spread of contamination. Bacteria multiply fastest between +8 °C and +68 °C and “blast chilling” or “shock freezing” food is the best defense of ensuring that foodborne pathogens are not given the time or the temperature required in order to develop into harmful bacteria.

Blast chilling gives much more effective control over food, getting it through the danger zone fast and preventing bacterial growth with no change in the flavour, texture or quality of the food. Blast chillers combined with HACCP software and the Sanigen sanitising system, that kills 97% of bacteria in the cabinet's environment and on the surface of the food, minimises one of the biggest stressors in a busy kitchen.

IRINOX’s Multi Fresh system operates in standard or dynamic mode and offers thawing, proofing, personalised cycles. With temperatures ranging from 80°C to -40°C, it can hold product, regenerate food, blast chill, freeze and cook using the new, innovative and unique ‘low temperature cooking’ function.

Peter BennettSKOPE welcomes Peter Bennett, our recently appointed NSW Regional Sales Manager, to their Australian team. Peter has hit the ground running and his appointment continues the momentum established by Dave Hale.
